A collection of fresh spicy green chillies at one of the many open air markets in Mandalay, Myanmar (Burma). Chillies or Cayenne pepper are a species of Capsicum and depending on the variety are typically used as spices, vegetables or medicines.
In Asia this food is cultivated on a huge scale and they are known to have been cultivated since at least 3000 B.C in Mexico.
The capsicum genus actually contains 20-27 different species of which some fruits and peppers can be eaten raw or cooked and others such as this firey green chilli a cultivar of the capsicum genus can be so hot and spicey it is preferable to cook it beforehand which can reduce the spiciness and add extra flavour to any culinary dish. |
